They are also known as carbohydrates, carbohydrates or carbohydrates. These are organic substances composed of carbon, hydrogen and oxygen . When we talk about carbohydrates, we are not necessarily talking about hydrated carbon molecules, but rather they are molecules made up of carbon atoms related to various functional groups.

Carbohydrates are considered a primary energy storage method and are part of one of the three main chemical groups that make up organic matter in combination with fats and proteins.

Carbohydrates can be of two types:

    • Simple: in this model, we can find hydrates such as honey and sugar.
    • Compounds: can be identified as legumes, cereals, rice, among others.
Each type of carbohydrate fulfills a specific function in the body; Some serve to optimally maintain body temperature , others are responsible for regulating blood pressure, others are responsible for maintaining the impulse of neuronal activity and others are responsible for maintaining the optimal functioning of the intestines.

Within the nutritive process that the organism needs, carbohydrates fulfill a super important function since more than 50% of the energy that a human being needs , comes from carbohydrates rich in starch, such as legumes, cereals and pasta.

The vegetables and fruits equally are an excellent source of carbohydrates other than vitamins and minerals provide optimal and essential for the organism. That is why they must be included in a daily and balanced diet.
